Be Curious, for more information, please visit http://www.lemeridienpiccadilly.co.uk/ A DAY IN THE LIFE OF A HEAD PASTRY CHEF… As head pastry chef I plan my schedule around the business, I work 5 days over 7 with two split shifts and three straight shifts, I ensure all meal periods and functions are covered. As a manager my team looks to me for inspiration and leadership, I help them bring their ideas to life, with my guidance we create beautiful desserts up to a 1 rosette standard for the Terrace restaurant and also afternoon tea, buffets and plated desserts for functions. Collectively as team we are constantly creating new branded experiences for our guests with our éclair program. I currently have a team of 4 chefs of mixed positions and with my support I help them grow and develop their skills, learning and training takes place every day here. Each chef is encouraged to come up with new desserts & ideas. We have the freedom and support of the head chef to implement new dishes. As part of the management of the kitchen I answer into the head chef, I fully support the sous chefs of the kitchen and play an active role in all aspects of H&S from auditing to meetings and logging. Sometimes I will run the pass for the restaurant on busy days to help out, with my creative flair I enjoy doing this and it also helps me develop my leadership skills to a wider audience. I have basic computer skills and I use this to plan and organise, some days I’m in charge of the ordering for the whole kitchen. We all work closely with the head chef who encourages our ideas and creativity while linking it into seasonal and sustainable produce and understanding how this impacts our food cost & profit margin for the hotel. The Kitchen has a great development path where there have been some great internal promotions over the last years. We also have Kitchen employees of the month so our hard work never goes unrewarded. The Pastry and Main Kitchen work together, this is great for our development it’s not unusual to be working on banqueting for example, we can learn new skills and techniques from each other. Communication is really good in the kitchen where we have monthly meetings together with Chef, looking at financial performance and what the Hotel and Kitchen’s future plans are. There is a great team. We support and look after each other and all have a massive amount of passion for what we do. It is a pleasure to work at Le Meridien.
