Restaurant Manager for 2 AA Rosette - Edinburgh - up to £28000 plus benefitsThe Location:Set in the heart of the City, this beautiful restaurant is offering tourists and locals a Celtic-inspired contemporary menu within a chic art-deco inspired interior. As part of a sumptuous luxury Hotel this Brasserie is one of the best in town.Job PurposeYou will be responsible for the daily management of the restaurant and leading a team of 30 associates.This role covers all dining experience including breakfast, lunch and dinner service. You will be an active member of the management team of the hotel and may participate in Duty Manager shifts.The main responsibilities of this hands-on management position include leading the team, planning staff rotas, forecasting and managing payroll, staff incentives, cashing up procedures, opening and closing restaurant. You will be responsible for the business performance of the restaurant, as well as maintaining high standards of food, service, and health and safety, training and development of your successful and passionate team.Job TasksFull control and responsibility over the restaurant operational and financial resultsProvide a 5 star environment and atmosphere to guest and team members alikeCreates and implements promotional/social events to promote the restaurant and maximise revenues;Creating and executing plans for department sales, profit and staff development.Setting budgets and/or agreeing them with senior management.Planning and coordinating menus.Ensure continuous training for the team to constantly improve service and ensure staff have a thorough knowledge for a perfect guest experienceTo handle complaints in a professional and courteous manager (notifying senior management where necessary);Stock control and stock ordering for the Dining room and beveragesConducts the recruitment, training and supervision of all service staff under the guidance of the Personnel Manager;Maintains exceptional attention to detail and implements SOPs to ensure all staff are trained and aware of the correct standards of appearance, cleanliness and proper set up of the dining rooms;To be aware of, and comply with all statutory requirements on Health & Safety and all aspects of the Restaurants Health & Safety Policy and Fire & Evacuation Procedures.Candidate ProfileWork Related ExperiencePrevious experience in a similar position, ideally in a Rosette/Michelin establishment;Excellent knowledge of food & wine;Previous Restaurant or F&B management within a Hotel is advantageousA passion for service excellence, dining experience, is able to work using initiative, standards driven, and the ability to lead and manage a team.Experience in the identification and implementation of staff training and development;Strong financially awareness; Computer literate (Word, Outlook and Database knowledge, Quadranet);Proven leadership and interpersonal skills with the ability to lead & inspire a team;Hands on ManagerPersonal QualitiesThe ability to communicate effectivelyMust possess the desire to generate customer satisfactionImmaculate personal appearance is requiredMust have the ability to work in a pressurised environmentA confident, mature and professional approach is essentialMust possess a good eye for the finer detailMust have an enthusiastic disposition especially in regards to food, service standards and consistencyPossess a great personality and have a passion for hospitalityPersonal Licence HolderInterested in this great challenge?
